French-Spanish fine dining with two daily happy hours — and it’s from the team that built one of Las Vegas’s most beloved restaurant legacies. Braseria by EDO landed in early 2026 at The Collective on Paradise Road, inheriting a bigger room but bringing the same obsessive kitchen talent that made EDO Gastro a local institution for years. The happy hour at Braseria bar area runs Monday through Saturday, 4:30–6pm and again from 9–11pm.
Order This:
- Panisse ($8) — six crispy chickpea fritters, sharp salty cheese on top, creamy inside, with a bright lemony dip. Half the regular menu price.
- Skirt Steak & Frites ($25) — French brasserie done right, at happy hour pricing.
- Cocktails: the Cucumber Gin and Tonic ($11) is a full pour, herby and cold — perfect against the brava sauce on everything else.
EDO Hospitality didn’t open a replacement when they closed the original EDO. They opened something more ambitious — a French brasserie with Spanish DNA, executive chefs from Joël Robuchon’s kitchen, and Chartreuse on draft. The fact that it’s tucked into a strip mall on Paradise (upstairs — take the elevator) between the Sphere corridor and Hughes Center is very Las Vegas: serious cooking in an unlikely package. This is the off-Strip spot the locals’ dining crowd has quietly claimed as theirs. 🥂
Happy hour runs Mon–Sat 4:30–6pm and 9–11pm. Bar seating is available without reservations during happy hour. Reservations recommended for the main dining room.
