French-Spanish fine dining with two daily happy hours from the team that built one of Las Vegas’s most beloved restaurant legacies. Braseria by EDO landed in early 2026 at The Collective on Paradise Road, inheriting a bigger room but bringing the same obsessive kitchen talent that made EDO Gastro a local institution for years. The happy hour at Braseria bar area runs Monday through Saturday, 4:30โ6pm and again from 9โ11pm.

EDO Hospitality didn’t open a replacement when they closed the original EDO. They opened something more ambitious โ a French brasserie with Spanish DNA, executive chefs from Joรซl Robuchon’s kitchen, and Chartreuse on draft. The fact that it’s tucked into a strip mall on Paradise (upstairs โ take the stairs or elevator) between the Sphere corridor and Hughes Center is very Las Vegas: serious cooking in an unlikely package. This is the off-Strip spot the locals’ dining crowd has quietly claimed as theirs. ๐ฅ
Happy hour runs MonโSat 4:30โ6pm and 9โ11pm. Bar seating is available without reservations during happy hour. Reservations recommended for the main dining room.

We were there yesterday for the 4:30 seating. Regulars at the bar steered us toward the burger ($14) and the oysters ($12) with a house Martini ($12) โ so naturally we ordered both. Surf and turf, plus a pint of Meteor French draft, and somehow the math still worked. In what universe does an upscale happy hour in a beautiful upstairs room cost less than a movie ticket and popcorn? This one. Brasserie EDO, baby.
Two happy hours a day means you can do oysters or cod buรฑuelos before a show, then come back for the full-size 30/70 Wagyu burger with bravas sauce after. Just off the Strip in The Collective, free parking, a few other foodie hot spots nearby. Off the Strip and worth the trip
