$4 steak and eggs and $3 top-shelf cocktails โ at an award-winning butcher shop and steakhouse in Tivoli Village. The Echo & Rig happy hour at the Summerlin flagship runs MonโFri 3โ6pm with some of the most specific and well-priced bar bites of any off-Strip steakhouse in Las Vegas.
Order This:
- Steak & Egg ($4) โ prime steak, sunny side up egg; the happy hour item reviewers call out by name every single time; order it immediately
- Butcher Fries ($5) โ Kennebec fries topped with prime steak and house-made sauce; the loaded fries that justify the drive to Tivoli Village on their own
- Hot Dog ($3) โ sauerkraut, brown mustard; a $3 hot dog at a steakhouse is a deliberate choice that works completely
- $3 top-shelf cocktails โ the bar program at Echo & Rig is serious; order something from the craft cocktail list and let the bartender make the call
Chef Sam Marvin โ creator of Bottega Louie in Los Angeles โ built Echo & Rig around a single idea: put the butcher shop front and center, let the customer see the cuts, and price the happy hour in a way that gets people in the door without cheapening the experience. The Tivoli Village flagship is where the concept began, and the on-site butcher shop means everything served at the bar during happy hour starts with the same sourcing as the $60 dinner entrees. The Summerlin crowd that has been coming here since it opened treats the 3โ6pm window as a standing reservation. Complimentary valet from Tivoli Village makes the logistics easy. ๐ฅฉ
